as the weather is getting wetter and colder (we Scotland anyway lol) and i work outside I'm now wanting something worm for my lunch but buy tins can be a little expensive and i sometimes fine they are a bit to sweet or thick.

so I'm looking for any good home made soup recipes, i made carrot and butter been last year as thats one of my faves.


I'm not too fussy but cant stand onions so they have to be very well hidden lol and I'm not a big red meat eater. other than that anything goes.

so any good recipes people recommend.

Celeriac and Pear is my favourite and easy peasy to make - I will send you recipe if you would like it - tastes amazing - honest! x

Courgette - really easy to make in microwave and delicious.
1 sliced onion and 1 1/2 lb sliced courgettes.
Melt some butter in dish in micro, add onion and micro 5 mins. Add courgettes and cook 5 mins. Add 1 1/2 pints stock, cover and cook 20 mins then puree.
Easy!!

I love Cauliflower soup, it's really easy to make, and tastes nice I promise. let me know if you want the Recipe

Celery and Stilton is yummy! Can also use Brocoli if you prefer.

Or a 'bung it all in' winter vegetable soup. Easiest soup ever. Just peel and roughly chop a variety of winter veg (I use celery, leek, carrots and parsnips) add some stock made from vegetable stock cube, season lightly and simmer for an hour or two. Then puree.

Edit - just seen your comment about onions! You might not want to use leeks then?!

Annabel and I made up a soup yesterday and it was yummy!

Lentil and chorizo :D

1 large potato cut into cubes (smallish)
2 carrots also cut into cubes
I onion diced (optional ;))
approx 50g of red lentils and 50g of green lentils (dried)
2 pints of veg stock
Finely chopped chorizo (add however much you like!)

Put all the ingredients in the stock except for the chorizo. Simmer until the veg is tender and lentils are cooked, add the chorizo and simmer for another 5 mins. Serve. :)

Because we made it up you might need to add a bit more stock if it is too thick as I am guessing the measurements.

Butternut Squash Soup

Ingredients

15ml (1 tbsp) olive oil
30g (1 oz) butter
1 onion, peeled and chopped
1 clove garlic, crushed
900g (2 lbs) butternut, peeled and sliced
900ml (1½ pints) Knorr vegetable or chicken stock
30g (1 oz) chives, washed and roughly chopped


Method
1.Heat the oil and butter in a large saucepan, add the onion and garlic and gently sauté.
2.When the onion has softened after about 5 minutes, add the butternut and stock and stir well. Bring to the boil. Simmer for 25 minutes or until the butternut is soft.
3.Blend the soup with a hand-held blender or in a food processor.
4.Season to taste, serve in four bowl and sprinkle with the herbs.


Broccoli soup with blue cheese

Ingredients
1 large onion , roughly chopped
olive oil
1 large potato , peeled and cubed
1l vegetable stock
1 head broccoli , about 300g, roughly chopped
blue cheese, such as Stilton or roquefort, about 100g, crumbled

Method
1.Cook the onion in 1 tbsp olive oil in a large pan until soft (about 5 minutes). Add the potato and stock and simmer until the potato is tender (about 10 minutes).
2.Add the broccoli and cook for 3-4 minutes until just tender but still bright green. Add half the cheese and whizz to a smooth soup in a blender. Season then serve with the rest of the cheese crumbled over

Leek and potato soup

Ingredients
1 tbsp vegetable oil
1 onion, sliced
225g/8oz potatoes, cubed
2 medium leeks,sliced
1.2 litres/2 pints vegetable stock
150ml/5fl oz double cream or crème fraîche (I don't always add this - just put a drop of milk in)
salt and freshly ground black pepper

method
1.Heat the oil in a large pan and add the onions, potatoes and leeks. Cook for 3-4 minutes until starting to soften.
2.Add the vegetable stock and bring to the boil. Season well and simmer until the vegetables are tender.
3.Whizz with a hand blender or in a blender until smooth. Reheat in a clean pan, stir in the cream or crème fraîche, heat through and serve

My Hubby just made the best butternut squash soup, and a cream of brocoli one that was low fat..and delish~
Teh butternut squash one is on my list of best things I have ever ever tasted

I luurrvee Soup!!! Some yummy ones on here thanks:) Need to loose some lbs and i could easily feast on soup all winter,although no sign of it yet:)

The key to really good soup is to use really good stock. If you don't want to make your own, I can highly recommend Marigold Swiss Vegetable Bouillon, it's pricey but well worth it, flavour will be so much better than stock cube.
Kendal - if you like leeks, leek and tattie soup is amazing if you add a spoonful of creamed horseradish sauce.
Courgette soup with brie added at the end so it melts in is yummy.
One of my favourites is roasted red peppers, roasted toms and red onion, wee bit of basil or dill gives it a lift. Roasting the veg first brings out the flavour more.
Quick and easy receipe for Carrot and coriander - it's delicious :) if you blend it, you won't notice the onion:Heat a little oil in pan, add onion and fry gently, add chopped carrot and stock, when cooked blend until smooth and thick add chopped fresh coriander, grated carrot and milk, heat through for a few minutes. It should be thick and creamy.

mmmmm like the shoud of all of thease lol but not a fan of leek i made something with leek a while back ase the resapy looked fab but i couldnt eat it as i just couldnt stand the taste of the leek.


i dont know about the blue cheese i remember having something that was very nice with blue chees in it but it just the thaught of moldy cheese.

i can handle onion i just tend to add less that what they say and make sure it is almost desolved, nothing worse that crunching down on a still hard onion yuck.


never thaught of adding pears too a soup hmmm interested ijn that one just as an exsperament if nothing els.

I'm the same with onion, so I've taken to sticking it in the food processor and blitzing it, it makes it way more smaller tan you could possible chop it and it seems just to melt when you cook it.

Instead of blue cheese, philadephia cream cheese is nice in soup. Gives a smooth cheese taste rather than the strength of blue cheese (and lower in fat if you use the light variety!)
